Seafood Gumbo(Use A Very Large Pot.)
- 3 c. flour
- 3 c. oil
- 2 gal. water
- 8 onions, chopped
- 4 bell peppers, chopped
- 8 ribs celery, chopped
- 3 Tbsp. minced garlic
- 2 bunches green onions, chopped
- 2 Tbsp. parsley
- 1 Tbsp. liquid crab boil
- 1 can Ro-Tel tomatoes
- 2 small pkg. frozen okra
- 10 lb. shrimp
- 2 lb. crab meat
- 1 qt. oysters
- salt to taste
- red pepper to taste
- Make a very dark roux with flour and oil, stirring all the time.
- Add onions, garlic, bell peppers and celery.
- Stir well. When wilted, add tomatoes and water.
- Salt and pepper.
- Let come to a boil, then turn to medium heat and add okra and crab boil.
- Let simmer 45 minutes.
- Add shrimp, crab meat and oysters.
- Simmer slowly for 20 minutes.
- Turn off heat.
- Add green onions and parsley.
- Serve over rice.
