Cheese And Sausage Medley
- 4 c. plain croutons
- 1/2 c. chopped celery
- 1/2 c. chopped onion
- 3/4 c. mayonnaise
- 1 c. (4 oz.) shredded Swiss cheese
- 2 c. half and half
- 2 c. cooked sausage, drained
- 1/2 c. chopped green pepper
- 1/4 c. chopped pimiento
- 2 tsp. prepared mustard
- 4 eggs, slightly beaten
- Place 2 cups croutons in a buttered 2-quart casserole.
- In a large bowl, combine sausage, celery, green pepper, onion and pimiento.
- Fold in mayonnaise and mustard.
- Spread over croutons.
- Top with cheese and remaining croutons.
- Combine eggs and half and half.
- Pour over croutons.
- Cover and refrigerate at least 2 hours or overnight.
- Bake in a preheated 375u0b0 oven, uncovered, for 1 hour or until set.
- Remove from oven and let stand 10 minutes before serving.
- Makes 8 to 10 servings.
