Beef And Potato Moussaka
- 6 medium potatoes (2 lb.)
- 1 Tbsp. oil
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 lb. ground beef
- 8 oz. can tomato sauce
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. dried mint
- 1/4 tsp. cinnamon
- 1/4 c. fresh parsley
- 1/4 c. butter
- 2 Tbsp. flour
- 2 c. milk
- 2 eggs, slightly beaten
- 1/4 c. grated Parmesan cheese
- Grease baking dish.
- Slice potatoes 1/8-inch thick.
- Cover bottom of casserole with potatoes.
- In a skillet, heat olive oil. Add onion, garlic and meat until it loses red color.
- Add tomato sauce, cinnamon, mint, parsley, salt and pepper.
- Cover and simmer for 5 minutes.
- Pour meat mixture over potatoes.
- Slice rest of potatoes for topping.
- In saucepan, melt butter.
- Stir in flour and milk.
- Cook until thickened, stirring often.
- Stir in beaten eggs and then Parmesan cheese.
- Pour over casserole.
- Bake until potatoes are done.
- (Bake 1 hour at 375u0b0.)
