Golden Raisin Cookies
- 2 c. golden raisins
- 1 c. water
- 3 c. sifted flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 c. butter (room temperature)
- 1 1/2 c. sugar
- 3 eggs (room temperature)
- 1 tsp. vanilla
- 1 tsp. orange extract
- 1 c. chopped walnuts
- 1/2 c. sugar, mixed with 3/4 tsp. cinnamon
- In a saucepan, combine raisins and water.
- Cook over medium heat until water is absorbed.
- Cool.
- Sift flour, baking soda and salt together.
- Set aside.
- Cream butter; add sugar.
- Add eggs, one at a time, beating well after each addition.
- Add vanilla and orange extracts.
- Add dry ingredients and mix well.
- Stir in walnuts and raisins.
- Mix sugar and cinnamon in a pie plate.
- Drop rounded teaspoonfuls of dough into cinnamon-sugar and coat well. Place sugar coated balls on greased cookie sheet 2 inches apart. Bake in a 350u0b0 oven for 12 minutes, or until golden brown.
- Makes 6 dozen cookies.
