Seven Layered Salad
- 3 c. shredded iceberg lettuce
- 1 medium sweet red pepper, cut into strips
- 1 medium cucumber, sliced
- 2 c. red cherry tomatoes, halved
- 1 medium sweet yellow pepper, cut into thin strips
- 1 c. thinly sliced celery
- 1/4 c. sliced green onions
- 1/4 c. red vinegar
- 2 tsp. Dijon mustard
- 1 tsp. dried Italian seasoning
- 1 tsp. minced fresh garlic
- 1/2 tsp. pepper
- 1/2 tsp. hot sauce
- 1/2 c. shredded Mozzarella cheese
- red pepper rings (garnish)
- Layer first 7 ingredients in a 3-quart bowl.
- Mix vinegar and next 5 ingredients in a small bowl, stirring with a wire whisk. Pour vinegar mixture over vegetable layers.
- Sprinkle with cheese; cover and chill.
