Creamy Gelatin Salad
- 1 large (24 oz.) carton 1% cottage cheese
- 8 Tbsp. lite sour cream
- 1 small (3 oz.) pkg. sugar-free gelatin (any flavor)
- 6 pkg. non-nutritive sweetener or 1/4 c. sugar
- 3 c. fruit (any fruit)
- Use food processor and cream the entire carton of cottage cheese to the consistency of sour cream.
- A blender will work, but does not cream the cottage cheese as smooth as food processor. Mix gelatin following package directions for dissolving; do not add second cup of water.
- Set dissolved gelatin aside to cool. Add sour cream to creamed cottage cheese and mix well.
- Add gelatin to cottage cheese mixture.
- Add sweetener or sugar and mix.
- Fold in fruit.
- Pour in large glass casserole and place in refrigerator to chill.
- Take at least 2 hours to set.
- Entire recipe makes 8 servings.
