Banana-Apricot Nut Bread
- 2 c. unbleached flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. sugar
- 1/2 c. chopped dried apricots
- 1/4 c. chopped toasted walnuts
- 1/2 c. skim milk
- 2 egg whites
- 1/4 c. low-fat vanilla yogurt
- 2 ripe bananas
- Stir together flour, baking powder, soda, salt, sugar, apricots and nuts until thoroughly blended.
- In a separate bowl, combine bananas, milk, egg whites and yogurt; stir into dry ingredients just until well blended.
- Pour batter into a greased loaf pan. Bake in a preheated 350u0b0 oven (325u0b0 for glass pan) for 1 1/4 hours or until bread begins to pull away from sides of pan and toothpick comes out clean.
- Let cool in pan for 10 minutes; turn out onto a rack to cool completely.
- Makes 1 large loaf.
