Portuguese Kale Soup
- 1 lb. linguica
- 1 Tbsp. olive oil
- 1/2 red bell pepper, chopped
- 4 garlic cloves, minced
- 1 large onion, chopped
- 1 gal. chicken broth
- 4 bay leaves
- 2 bunches kale, chopped
- 4 large potatoes, quartered
- 1/4 c. parsley, chopped
- 1/4 tsp. crushed red chili pepper
- salt and pepper to taste
- 3/4 c. white beans (optional)
- Remove casing from linguica and
- saute in olive oil.
- Add red bell pepper, onion, garlic and potatoes.
- Season with salt and pepper and saute mixture until translucent.
- Add chicken broth and heat to boiling.
- Add kale, bay leaves and parsley; return to boil.
- Lower heat and add beans and red pepper.
- Salt and pepper to taste and simmer for 2 hours.
