Chicken Cordon Bleu With White Wine Sauce
- 4 whole chicken breasts, split, skinned and boned
- 8 tsp. parsley, chopped
- 8 thin slices (4 oz.) Mozzarella cheese
- 4 thin slices (4 oz.) ham, cut in half
- 1 Tbsp. mayonnaise
- 1 Tbsp. warm water
- 1 c. seasoned bread crumbs
- 2 c. White Wine Sauce (recipe follows)
- Pound chicken breasts until thin.
- Lay out flat and sprinkle with parsley.
- Top each breast with slice of cheese and 1/2 slice of ham.
- Roll up tightly.
- Stir together mayonnaise and water in shallow dish.
- Roll each bundle in mayonnaise mixture and then in seasoned bread crumbs.
- Spray baking sheet with cooking spray. Arrange bundles, seam side down, in a single layer on baking sheet.
- Bake at 425u0b0 for 15 to 20 minutes or until browned, cooked through and cheese is melted.
- Serve with White Wine Sauce and sprinkle with parsley.
- Makes 8 servings.
