Mexi Turkey D'Light
- 1 lb. ground turkey
- 1 (1 1/4 oz.) pkg. taco seasoning
- 1/2 c. water
- 1 (15 oz.) can kidney beans, drained
- 1 (16 oz.) can Mexican tomatoes
- 1 (6 1/2 oz.) pkg. yellow corn bread mix
- 1/4 onion, chopped
- 1/4 green pepper, chopped
- 1/4 c. jalapeno pepper, chopped
- 1/2 c. reduced calorie cheese, grated
- Cook turkey about 5 minutes or until no longer pink.
- Add taco seasonings and water and simmer for 10 minutes.
- Place kidney beans in an 8 x 2-inch casserole.
- Layer cooked turkey on top of beans, then tomatoes.
- In a small bowl, mix corn bread mix, adding water according to package directions, with onion, cheese and peppers. Spread mixture on top of turkey and beans.
- Bake at 350u0b0 for 35 to 40 minutes or until corn bread mix is golden brown.
- Makes 6 to 8 servings.
