Red Beans And Rice
- 1 lb. dry kidney beans (the lighter in color, the fresher)
- 1 medium onion, chopped
- 1/2 bell pepper, chopped
- 2 cloves garlic, chopped
- 1 lb. ham seasoning or sausage
- salt and pepper to taste
- 1 stick margarine (optional)
- In a large bowl put beans and cover with water.
- Microwave on High for 30 minutes.
- Make sure they are covered with water at all times.
- (Or you could soak the beans overnight.)
- Cook on medium-high with onion, bell pepper, garlic, salt and pepper, stirring often).
- When beans start to become soft (or sticking to the side of the pot), add meat.
- (If using sausage, brown first.) When beans become real soft and creamy, they are done.
- If you want them creamier, add the stick of margarine when they have been turned off.
- Serve over rice.
- They are good with corn bread. This recipe is very filling and goes a long way.
