Red Beans And Rice

  1. In a large bowl put beans and cover with water.
  2. Microwave on High for 30 minutes.
  3. Make sure they are covered with water at all times.
  4. (Or you could soak the beans overnight.)
  5. Cook on medium-high with onion, bell pepper, garlic, salt and pepper, stirring often).
  6. When beans start to become soft (or sticking to the side of the pot), add meat.
  7. (If using sausage, brown first.) When beans become real soft and creamy, they are done.
  8. If you want them creamier, add the stick of margarine when they have been turned off.
  9. Serve over rice.
  10. They are good with corn bread. This recipe is very filling and goes a long way.
