Green Beans In Tomato Basil Sauce
- 1 lb. fresh green beans or frozen
- 1/4 c. olive oil
- 1 large clove garlic, sliced
- 1 fresh tomato, finely chopped
- 1/2 Tbsp. fresh sweet basil
- water (if necessary)
- salt and pepper to taste
- Cook beans until tender.
- Meanwhile, prepare sauce.
- Lightly brown the garlic in olive oil.
- Remove garlic.
- Let oil cool a bit and add tomato and basil; fry for 10 minutes over medium heat. Add a little water if mixture seems too dry.
- Then add cooked beans with 1/4 cup more water and stir on low heat until water is evaporated and beans are just lightly frying in the tomato-oil sauce.
- Salt and pepper to taste.
- You may serve at this point or even better refrigerated for a few hours.
- Reheat.
- Serve. Freezes well.
- Serves 4 to 6.
