Green Beans In Tomato Basil Sauce

  1. Cook beans until tender.
  2. Meanwhile, prepare sauce.
  3. Lightly brown the garlic in olive oil.
  4. Remove garlic.
  5. Let oil cool a bit and add tomato and basil; fry for 10 minutes over medium heat. Add a little water if mixture seems too dry.
  6. Then add cooked beans with 1/4 cup more water and stir on low heat until water is evaporated and beans are just lightly frying in the tomato-oil sauce.
  7. Salt and pepper to taste.
  8. You may serve at this point or even better refrigerated for a few hours.
  9. Reheat.
  10. Serve. Freezes well.
  11. Serves 4 to 6.
