Ekuri Eggs(Scrambled Eggs With Ginger)
- 6 eggs
- 1/4 c. milk
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 3 Tbsp. oil
- 1 tsp. chopped ginger
- 3 Tbsp. chopped onions
- 3 Tbsp. chopped fresh coriander
- 1/4 tsp. turmeric
- 2 tsp. chopped chili (hot)
- 1/2 tsp. ground cumin
- Break eggs into bowl and whisk with fork.
- Add milk, salt and black pepper and stir until all ingredients are combined.
- Allow egg-and-milk-mixture to foam and become frothy.
- In heavy 10-inch skillet, heat oil and add ginger and fry for 10 seconds, then add onions and fry for 1 minute, until soft.
- Add coriander and then turmeric.
- Pour in beaten egg mixture and top with fresh chili. Reduce heat and stir with rubber spatula.
- Sprinkle with cumin and serve.
- Garnish with tomatoes and fresh coriander.
