Shrimp Gumbo

  1. Melt the margarine in 5-quart pan over medium heat.
  2. Cook onions, bell pepper and garlic in margarine about 5 minutes.
  3. Add flour; stir constantly until bubbly.
  4. Remove from heat.
  5. Add remaining ingredients (except shrimp, rice and parsley).
  6. Break up tomatoes, heat to boiling and reduce heat.
  7. Simmer, uncovered, for 45 minutes, stirring occasionally.
