Calorie Watchers Pasta With Shrimp, Scallops And Vegetables
- 1 Tbsp. vegetable oil
- 3 small zucchini, thinly sliced
- 1 red pepper, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 green pepper, thinly sliced
- 1 Bermuda onion, thinly sliced
- 8 oz. clam juice
- 1/2 lb. bay scallops
- 8 oz. shrimp, shelled and deveined
- 9 oz. fresh pasta or 16 oz. boxed pasta
- 2 Tbsp. parsley
- 1/4 c. heavy cream (optional)
- 1/4 tsp. salt
- pinch of cayenne pepper
- Cook zucchini, peppers and onion in oil for 5 minutes or until tender.
- Add parsley, clam juice, cream * and scallops.
- Cook gently until scallops are tender.
- Add shrimp and cook (1 to 2 minutes).
- Salt and pepper to taste.
- Pour or ladle over freshly cooked pasta.
