Fruitcake Midgets
- 3 c. chopped and peeled mixed candied fruit
- 1 c. chopped pecans
- 1 c. chopped almonds
- 1 c. chopped dates
- 1 c. golden raisins
- 1 c. soft margarine
- 3 eggs, beaten
- 1 tsp. ground cinnamon
- 2 c. firmly packed brown sugar
- 1/4 c. honey
- 1 tsp. lemon juice
- 1 tsp. vanilla
- 3 1/2 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. ground cloves
- 1/2 tsp. ground nutmeg
- Combine first 5 ingredients; set aside.
- Cream margarine and sugar; beat well and add egg, lemon juice and vanilla.
- Combine flour with remaining dry ingredients.
- Add fruit mixture to creamed mixture; then add flour mixture and blend well.
- Fill midget baking cups 2/3 full and bake at 350u0b0 for 15 minutes.
- Store in tin boxes and freeze until ready to use.
