Yummy Peanut Butter Cookies
- 1 c. margarine
- 1 c. peanut butter
- 1 c. white sugar
- 1 c. brown sugar
- 2 eggs
- 1 tsp. vanilla extract
- 1/2 tsp. almond extract
- 2 1/2 c. all-purpose flour
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- Preheat oven to 375 degrees. Grease two cookie sheets. In a large bowl, cream together margarine, peanut butter, white sugar and brown sugar until smooth. Beat in eggs one at a time, then stir in vanilla and almond extracts. Combine flour, soda and salt; stir into the peanut butter mixture. Roll dough into 1-inch balls and place them 2 inches apart onto the cookie sheets. Use a wet fork, dipped in sugar to make the crisscross pattern on top. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Grab a glass of milk and enjoy.
