Chicken Stuffed With Potatoes And Olives

  1. In a large bowl, place the potatoes, olives, rosemary, parsley, garlic, anchovies (optional), capers and olive oil.
  2. Salt and pepper the chicken inside and out.
  3. Toss the ingredients in the bowl together gently, and use to stuff the chicken.
  4. Don't stuff too tightly.
  5. Bake at 375u0b0 for 70 to 80 minutes.
  6. Quarter, and serve the bird with the dressing.
