Glacier Cucumber Salad
- 2 Tbsp. sugar
- 1 1/2 tsp. salt
- 1 c. sour cream
- 3 Tbsp. grated onion
- 1 or 2 Tbsp. white vinegar
- 3 cucumbers, peeled and thinly sliced
- 1 head cauliflower or may be mixed with broccoli
- 1 c. celery
- 1 c. green pepper
- 1 bunch green onions
- 1 pkg. tofu (warmed to room temperature)
- 2 Tbsp. salad dressing
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. table mustard
- 1 Tbsp. sweetener
- salt, pepper, dill, celery seed, etc. to taste
- Chop cauliflower, celery, green pepper and green onions. Blend tofu, salad dressing, apple cider vinegar, mustard and sweetener together.
- Mix well.
- Season to taste with salt, pepper, dill, celery seed, etc.
