Diabetic Cake
- 2 c. water
- 2 c. raisins (1 box is just right; Dole is best)
- 1 c. unsweetened applesauce (natural, no sugar added)
- 2 eggs
- 2 Tbsp. liquid sweetener or 4 envelopes Equal (it's best to use 6 pkg. Sweet 'N Low. I use it)
- 3/4 c. cooking oil (use whatever you have but if buying, Puritan has less saturated fat than any other oil on the market)
- 1 tsp. soda
- 2 c. all-purpose flour
- 1 1/4 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. vanilla
- Cook raisins in water until water is all gone; cool.
- Add applesauce, eggs, sweetener and cooking oil; mix well.
- Blend in baking soda and flour; mix well.
- Place in well greased tube or Bundt pan.
- I use tube pan and put a layer of waxed paper on bottom.
- I took out of pan as soon as it was baked but took a knife and went around circle twice before taking out of pan.
- Bake at 350u0b0 for approximately 45 minutes.
- Keep baking until toothpick comes out clean.
