Pat'S Apple Coffeecake

  1. Scale milk, cool to luke warm.
  2. Dissolve yeast in warm water (105 degrees).
  3. Add the cooled milk.
  4. Stir in 1 1/2 cups flour, beat until smooth.
  5. Cover and let rise until doubled in size, about 1 hour.
  6. Punch down and add eggs, one at a time, beating well after each.
  7. Stir in 1/2 cup margarine, 1/2 cup sugar, salt and the remaining flour.
  8. Beat well.
  9. Spread dough in a greased 9 x 9 x 2 inch baking pan.
  10. Spoon 2 tbsp margarine and 1 tbsp sugar over dough.
  11. Cover and let rise until doubled.
  12. Press apples into dough. Mix cinnamon, nutmeg and 1/2 cup sugar, sprinkle over the fruit. Bake in preheated over at 375 degrees for 40 - 45 minutes.
