Hearty Soup
- leftover ham bone, shoulder bone or 3 smoked ham butts
- 1/2 c. dried lima beans
- 1/2 c. dried split or whole peas (no need to soak)
- 2 Tbsp. barley
- 2 Tbsp. regular rice
- 1 (16 oz.) can tomatoes
- 1/2 tsp. black pepper
- 8 c. cold water
- 1/2 c. chopped celery
- 2 large chopped onions
- 2 potatoes, peeled and diced
- 1 washed, unpeeled, chopped carrot
- 1 clove garlic, minced (if desired)
- Cover first 7 ingredients with 8 cups cold water; bring to boil, then simmer for 1 hour.
- Then add rest of ingredients. Bring to a boil and simmer one more hour.
- When cool, remove bones and add meat to soup.
- If soup is too thick, thin with a little cold water.
- Season to taste.
- Freezes well.
