Fish And Shrimp Salad
- 1 lb. large shrimp
- 1 1/2 lb. halibut or haddock
- 1 qt. water
- 1 c. chopped onion
- 2 medium bay leaves
- 6 peppercorns
- 1 Tbsp. salt
- 2 medium tomatoes
- 1/2 c. onion, finely chopped
- 1 small sweet pepper
- 2 Tbsp. chopped parsley
- 1 Tbsp. chilies
- 1 Tbsp. chopped garlic
- 1/3 c. lemon juice
- 1/4 c. olive oil
- 2 Tbsp. tomato paste

- Cook shrimp.
- Combine water, onion and condiments in 3 to 4 quart casserole.
- Wrap fish in double cheesecloth.
- Bring to boil over high heat.
- Simmer on low 8 to 10 minutes (save broth).
- Cut up shrimp; flake fish.
- Add veggies.
- Beat lemon juice and oil. Stirring constantly, add 2/3 cup of broth, tomato paste and pepper. Toss and let marinate for 30 minutes.
- Makes 8 first course servings.
