Chicken With Sausage Stew
- 8 boneless chicken breasts, quartered lengthwise
- 1/2 c. flour with salt, pepper and a lot of oregano
- 1/4 c. olive oil
- 1 clove garlic
- 1 large Spanish onion, thinly sliced
- 1/2 lb. mushrooms, thinly sliced
- 2 green peppers, thinly sliced
- 4 large ripe tomatoes, peeled, seeded and chopped or 1 large can whole tomatoes and 1 small can whole tomatoes, drained or 1 large can whole tomatoes, not drained (both should be chopped)
- 3/4 lb. sweet Italian sausage
- 1/2 c. dry white wine
- 1 Tbsp. fresh basil or 1 tsp. dry basil
- salt and pepper to taste
- Shake chicken in flour mixture, saute in oil until golden brown in a frying pan.
- Remove chicken.
