Pasta In Shrimp And Wine Sauce
- 1 c. chopped onion
- 2 cloves garlic, chopped
- 2 Tbsp. butter
- 3 Tbsp. olive oil
- 1 c. dry white wine
- 1 Tbsp. instant chicken bouillon
- 1 tsp. basil, crushed
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 lb. small shrimp, peeled
- 1 c. chopped, seeded, peeled tomatoes
- 10 oz. pasta, cooked
- 1/4 c. melted butter
- 1/2 c. Parmesan cheese
- 1/2 c. chopped fresh parsley
- Saute onion and garlic in 2 tablespoons butter and olive oil in 2-quart saucepan until tender but not brown.
- Add wine, instant bouillon, basil, salt and pepper.
- Bring to a boil; reduce heat. Simmer for 12 to 15 minutes or until reduced by 2/3.
- Add shrimp. Simmer, covered, for 5 minutes or until done to taste.
- Stir in tomatoes.
- Add pasta and 1/4 cup melted butter; toss to mix well. Add cheese and parsley; toss to mix well.
- May substitute 1 cup scallops for shrimp.
- Yield:
- 6 servings.
