Texas Ranch-Style Gumbo

  1. Trim excess
  2. fat
  3. fromtteak,tut
  4. into 1-inch cubes. Combine flour, thyme,
  5. salt
  6. and pepper.
  7. Dredge meat in flour mixture.
  8. Heat butter and oil in Dutch oven, add meat and cook until brown.
  9. Remove
  10. meat;
  11. reserve
  12. drippings in Dutch oven. Add onions
  13. and
  14. chopped
  15. green
  16. pepper;
  17. saute until tender. Stir in meat and remaining ingredients except rice.
  18. Cover and simmer 1 1/2 hours.terve over rice.
  19. Makes 8 to 10 servings.
