Fruity-Baked Chicken
- 2 Tbsp. margarine
- 1/3 c. flour
- 1 1/2 tsp. salt
- 1/2 tsp. paprika
- 1/8 tsp. pepper
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 tsp. lemon juice
- 1 Tbsp. honey or brown sugar
- 1 lb. can fruit cocktail or peaches, drained (reserve 1/2 c. syrup)
- 2 to 2 1/2 lb. frying chicken, cut up
- Melt margarine in ungreased 13 x 9-inch pan.
- In paper bag, combine flour, salt, paprika and pepper.
- Shake chicken a few pieces at a time in flour mixture.
- Dip chicken skin side down in margarine.
- Place in pan, skin side up.
- Combine remaining ingredients except fruit.
- Pour over chicken pieces.
- Bake at 375u0b0 for 50 minutes, basting occasionally with sauce.
- Pour drained fruit over chicken.
- Sprinkle with cinnamon, if desired.
- Continue baking until tender (15 to 20 minutes).
