Dark Fruit Cake
- 2 c. butter
- 2 c. sugar
- 12 eggs
- 4 1/2 c. flour
- 3 boxes raisins
- 1/2 lb. crystalized pineapple
- 1/2 lb. red and green cherries
- 1/4 lb. orange peel
- 1/4 lb. lemon peel
- 1/2 lb. English walnuts
- 1/2 lb. black walnuts
- 1 Tbsp. vanilla
- 1 Tbsp. cinnamon
- 2 tsp. allspice
- 1/2 tsp. nutmeg
- 1/2 tsp. ginger
- 2 c. grape juice
- Prepare fruits; mix and place in large bowl.
- Soak overnight with grape juice.
- Sift spices and flour together 3 times.
- Cream butter; add sugar and cream together.
- Add eggs and flour alternately, carefully mixing after each addition.
- Add nuts gradually, mixing them well through the batter,
- small amount at a time, then the fruit and grape juice and mix well.
- Add vanilla. Bake in greased, lined pan.
- Bake on 2nd shelf at 275u0b0 for 3 to 3 1/2 hours, depending on your oven.
