Pear & Pine Nut Conserve

  1. In a Dutch oven, heat oil over medium heat. Add onion; cook and stir 6-8 minutes or until tender. Add pears, sugar, orange zest, orange juice and rosemary; bring to a boil. Reduce heat; simmer, uncovered, 40-45 minutes or until mixture is thickened, stirring occasionally. Stir in pine nuts. Return to a boil; cook and stir 5 minutes longer.
  2. Carefully ladle hot mixture into 5 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight.
  3. Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.
