Ms. Clara'S Oyster Cornbread Dressing(Lawrence'S Grandmother)
- butter or margarine
- 1/2 c. chopped green peppers
- 1 c. chopped green onions
- 1 c. chopped celery
- 3 to 4 slices white bread
- 1 pan cornbread (use own recipe)
- plenty of chicken broth (at least 4 cans)
- salt and pepper to taste
- 2 to 3 Tbsp. sage or desired taste
- 2 or 3 eggs
- oysters (as many as you like, at least 1 can)
- Saute peppers, onions and celery in small amount of butter. Toast bread and crumble up along with cornbread in large casserole or roasting pan.
- Pour enough broth over crumbled bread to make soft.
- Add sauteed peppers, onions and celery.
- Season to taste with salt, pepper and sage.
- Beat eggs and add to mixture.
- Mix thoroughly, adding desired amount of chicken broth to make moist.
