Impossible Cheeseburger Pie
- 1 lb. ground beef
- 1 1/2 c. chopped onion
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3/4 c. Bisquick baking mix
- 1 1/2 c. milk
- 3 eggs
- 2 tomato slices
- 1 c. shredded cheese or American cheese
- 1 1/2 c. shredded lettuce
- 12 to 16 slices dill pickle
- Grease pie plate, 1 1/2 x 10-inches.
- Cook and stir beef and onion in 10-inch skillet until brown; drain.
- Stir in salt and pepper.
- Spread in pie plate.
- Beat baking mix, milk and eggs with wire whisk or hand beater until almost smooth.
- Pour into pie pan. Bake 25 minutes.
- Top with tomatoes and cheese.
- Bake until knife in center comes out clean.
- Bake 5 minutes; top with lettuce and pickles.
- Makes 6 to 8 servings.
