Vegetable Casserole
- 1 c. long grain rice
- 2 Tbsp. butter or margarine
- 1/2 c. chopped onion
- 1 c. chopped carrots
- 2 c. broccoli flowerets
- 1 medium bell pepper, chopped
- 2 cloves garlic, minced
- 1 1/2 c. chicken broth
- 1 Tbsp. chopped parsley
- dash of salt and pepper
- 1 c. grated Cheddar cheese
- In a 2-quart casserole, saute the onions in the butter until soft.
- Add the carrots.
- Cook over medium heat for about 3 minutes.
- Add broccoli, bell pepper, garlic and rice.
- Stir to blend.
- Add the chicken broth.
- Bring to a boil.
- Cover with tight fitting lid.
- Cook over low to medium heat for about 20 minutes or just until rice is done.
- Add parsley and salt and pepper.
