A Hearty Soup
- 2 qt. chicken stock
- 1 hambone
- 1 c. diced salt pork
- 6 Tbsp. butter
- 3 medium onions, chopped
- 2 cloves garlic, chopped
- 3 stalks (ribs) celery, chopped
- 4 medium carrots, sliced
- 1 green bell pepper, chopped
- 1 Tbsp. dried rosemary
- 5 Tbsp. fennel seed*
- 1 bay leaf
- 4 medium zucchini, cubed
- 1 c. fresh mushrooms
- 3 to 4 c. chickpeas, drained
- 2 lb. bulk hot country sausage, cooked and drained
- 1/2 lb. vermicelli
- 6 fresh tomatoes, peeled and chopped
- 2 c. shredded turnip greens or spinach
- 1/2 c. fresh parsley
- *Omit fennel if using Italian sausage.
