Black Bottom Pie
- 8 oz. cream cheese (room temperature)
- 1/2 c. sugar
- 1 beaten egg
- 1/8 tsp. salt
- 3/4 c. semi-sweet chocolate chips
- 2 c. flour
- 1 c. sugar
- 1/4 c. cocoa
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. water
- 1/2 c. oil
- 1 Tbsp. white vinegar
- 1 tsp. vanilla
- Beat egg, 1/2 cup sugar and 1/8 teapooon salt with wire whisk. Add cream cheese and beat well.
- With wooden spoon, stir in chocolate chips and refrigerate at least 1/2 hour.
- Sift together dry ingredients in a large mixing bowl.
- Add liquids and beat well by hand.
- In paper lined muffin tins, put batter in each, filling 1/3 full.
- Place 1 heaping teaspoonful of the refrigerated cheese mixture on top.
- Bake at 350u0b0 for 25 minutes.
