Dreamy Pumpkin Pie
- 2/3 c. sugar
- 1 Tbsp. Knox gelatine
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 3 egg yolks, slightly beaten
- 3/4 c. milk
- 1 c. canned pumpkin
- 3 egg whites
- 1 c. nuts, chopped
- 1/3 c. sugar
- 1 (9-inch) graham cracker crust
- 1/2 c. whipping cream
- 1/2 c. toasted coconut, flaked
- 1 tsp. vanilla in filling and cream
- 3 Tbsp. sugar
- Combine in saucepan sugar, gelatine, cinnamon, salt and nutmeg.
- Add yolks and milk and cook, stirring constantly until slightly thick. Add pumpkin and nuts.
- Chill, stirring often. Beat egg whites until soft peaks form.
- Add 1/3 cup sugar, then fold chilled pumpkin into egg whites.
- Put into crust.
- Garnish with whipped cream and coconut to serve.
