Busy Day Vegetable Stew And Rice
- 4 c. water
- 1 lb. smoked ham bones or ham hocks
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 (17 oz.) can whole kernel corn, drained
- 1 (16 oz.) can whole peeled tomatoes, cut up
- 1 (10 oz.) pkg. frozen cut okra
- 1 tsp. dried basil leaves
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/4 tsp. pepper
- corn bread or crusty French bread
- Bring water, ham, onion and garlic to boil in large saucepot. Reduce heat to low; cover and simmer 2 hours or until ham is tender.
- Remove ham; cool slightly.
- Cut ham from bones and return to pot; discard bones.
- Add corn, tomatoes, okra, basil, sugar, salt and pepper.
- Return to boil.
- Reduce heat to low and simmer, uncovered, for 10 minutes or until okra is tender, stirring occasionally.
- Serve with corn bread or French bread.
- Makes 4 servings.
