Shrimp Casserole For A Crowd
- 1 green pepper, chopped
- 2 stalks celery, chopped
- 1 medium onion, chopped
- 2 c. water
- small can pimentos, chopped
- 3 lb. cooked, deveined shrimp
- 1 can crabmeat
- 4 hard-cooked eggs, cut in thick slices
- 4 Tbsp. butter
- 4 Tbsp. flour
- 2 c. light cream
- 1 c. shredded sharp Cheddar cheese
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3/4 c. buttered bread or cracker crumbs
- Combine chopped pepper, celery, onion and water and cook until vegetables are tender.
- Drain.
- Add pimentos, shrimp, crabmeat and eggs.
- Make cheese sauce:
- melt butter and stir in flour until smooth.
- Gradually add cream and cook until mixture thickens, stirring constantly.
- Add cheese, salt and pepper.
- Add sauce to shrimp mixture and put in 3-quart casserole dish.
- Sprinkle crumbs over top and bake at 400u0b0 for 15 minutes.
- Yields 12 to 15 servings.
