Hot Creamed Potato Salad
- 4 slices bacon
- 2 Tbsp. butter
- 1 c. thinly sliced celery
- 1/4 c. sliced green onion
- 2 Tbsp. flour
- 2 Tbsp. sugar
- 2 tsp. salt
- 1 tsp. paprika
- 1 tsp. dry mustard
- 1/4 tsp. pepper
- 1 c. milk
- 1/4 c. vinegar
- 4 c. sliced, cooked potatoes
- 1/2 c. diced green pepper
- 1/2 c. dairy sour cream
- Cook bacon, drain, crumble and set aside.
- Melt butter in large skillet; add celery and onion and saute until tender. Combine flour, sugar, salt, pepper, paprika, mustard and milk; stir into celery mixture.
- Cook stirring constantly until thickened.
- Stir in vinegar.
- Add potatoes and green pepper; stir carefully to coat with dressing.
- Heat thoroughly.
- Just before serving, stir in sour cream and sprinkle with bacon.
- Makes 6 servings.
