Hot Creamed Potato Salad

  1. Cook bacon, drain, crumble and set aside.
  2. Melt butter in large skillet; add celery and onion and saute until tender. Combine flour, sugar, salt, pepper, paprika, mustard and milk; stir into celery mixture.
  3. Cook stirring constantly until thickened.
  4. Stir in vinegar.
  5. Add potatoes and green pepper; stir carefully to coat with dressing.
  6. Heat thoroughly.
  7. Just before serving, stir in sour cream and sprinkle with bacon.
  8. Makes 6 servings.
