Creamed Sherry Spinach
- 1 (12 oz.) pkg. frozen chopped spinach
- 1/4 c. butter or margarine
- 1/4 c. flour
- 1 can cream of mushroom soup
- 1/4 c. sherry
- 1/2 c. grated Cheddar cheese
- 1/2 c. bread crumbs, firmly packed
- 3 eggs, slightly beaten
- 1 tsp. onion, grated
- 1/4 tsp. nutmeg
- salt and pepper
- Cook spinach according to package directions, drain well.
- Melt butter, stir in flour, add soup and wine.
- Cook, stirring, until mixture boils and thickens.
- Add cheese; stir over low heat until melted.
- Remove from heat.
- Add spinach and other ingredients. Turn into well-greased casserole or custard cups.
- Set in shallow pan of hot water.
- Bake in 350u0b0 oven about 45 minutes or until firm.
- Remove from oven; let stand 5 minutes or so before serving. Serves 6 to 8.
