Country Sausage Casserole
- 1 lb. smoked sausage
- 1 c. chopped onion
- 1 Tbsp. vegetable oil
- 1 can broccoli soup
- 2 1/2 c. hot water
- 1/4 tsp. pepper
- 1 pkg. Betty Crocker au gratin potatoes
- 10 oz. pkg. frozen chopped broccoli, thawed and drained
- 4 medium carrots, julienned
- 1 c. Cheddar cheese
- Cut sausage into 1/2-inch pieces.
- Cook and stir sausage and onion in oil until onion is tender (about 5 minutes).
- Stir in potato mix, water and pepper.
- Heat to boiling.
- Reduce heat and cook 10 minutes, stirring occasionally.
- Stir in can of broccoli cream soup and carrots; simmer until tender.
- Stir in broccoli and shredded Cheddar cheese.
- Cook for 10 minutes or less.
- Makes 4 to 5 servings.
- May be frozen and reheated.
