Country Sausage Casserole

  1. Cut sausage into 1/2-inch pieces.
  2. Cook and stir sausage and onion in oil until onion is tender (about 5 minutes).
  3. Stir in potato mix, water and pepper.
  4. Heat to boiling.
  5. Reduce heat and cook 10 minutes, stirring occasionally.
  6. Stir in can of broccoli cream soup and carrots; simmer until tender.
  7. Stir in broccoli and shredded Cheddar cheese.
  8. Cook for 10 minutes or less.
  9. Makes 4 to 5 servings.
  10. May be frozen and reheated.
