Sea Salt Mint White Mocha Cookies

  1. Preheat oven to 350u0b0. In a large bowl, cream shortening and sugars until light and fluffy. Beat in eggs and extract. In another bowl, whisk flour, espresso powder, salt and baking soda; gradually beat into creamed mixture. Stir in oats and white chips.
  2. Drop dough by scant 1/4 cupfuls 2 in. apart onto parchment-lined
  3. . Bake until edges begin to brown, 12-15 minutes. Cool on pans 5 minutes. Remove to wire racks to cool. Store in an airtight container.
