Krautsalat(Shredded Cabbage Salad)

  1. Grate the potatoes and onions on the fine side of a grater or through a blender with a little water.
  2. Add the eggs and mix well. Add the matzo meal, salt and pepper and mix again.
  3. Heat the oil in a frying pan and add the mixture, one tablespoon at a time, into the pan.
  4. When the latkes are golden brown, turn them over and brown the other side.
  5. Serves approximately 20.
