Krautsalat(Shredded Cabbage Salad)
- 2 c. water
- 1 tsp. salt
- 4 c. shredded cabbage (1 small head)
- 1/2 tsp. caraway seed
- 4 slices bacon, diced
- 1 medium onion, chopped
- 1/4 c. vinegar
- 5 large potatoes, peeled
- 1 large onion
- 4 eggs
- 1 1/3 c. matzo meal
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/3 c. oil for frying
- Grate the potatoes and onions on the fine side of a grater or through a blender with a little water.
- Add the eggs and mix well. Add the matzo meal, salt and pepper and mix again.
- Heat the oil in a frying pan and add the mixture, one tablespoon at a time, into the pan.
- When the latkes are golden brown, turn them over and brown the other side.
- Serves approximately 20.
