Joan Donahue'S Tortellini Soup
- 1 lb. Italian sausage
- 1 c. chopped onion
- 2 cloves garlic
- 5 c. beef broth
- 1 c. V-8 juice or 1/2 c. red wine and 1/2 c. water
- 2 c. chopped seeded tomato (16 oz. can)
- 1 c. carrots, sliced
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 8 oz. tomato sauce
- 1 1/2 c. sliced zucchini
- 8 oz. tortellini
- 3 Tbsp. fresh chopped parsley
- 1 medium green pepper (1/2-inch pieces)
- grated Parmesan cheese
- Brown sausage; drain and remove from pan.
- Saute onions and garlic until tender.
- Add broth, V-8 (or wine and water), tomatoes, carrots, basil, oregano, tomato sauce and sausage. Bring to boil, reduce heat and simmer 30 minutes.
- Stir in zucchini, tortellini, parsley and green pepper and simmer, uncovered, for 35 to 40 minutes more.
- Serve with grated Parmesan cheese.
