Banana Bread
- 1 3/4 c. all-purpose flour
- 2/3 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 c. mashed banana (2 to 3 medium bananas)
- 1/3 c. shortening, margarine or butter
- 2 Tbsp. milk
- 2 eggs
- 1/4 c. chopped nuts
- Preheat oven to 350u0b0.
- In a large mixer bowl, combine 1 cup of flour, the sugar, baking powder, baking soda and salt.
- Add mashed banana, shortening, margarine or butter and milk.
- Beat with an electric mixer on low speed until blended, then on high speed for 2 minutes.
- Add eggs and remaining flour.
- Beat until blended. Stir in nuts.
- Pour batter into a greased 8 x 4 x 2-inch loaf pan. Bake for 55 to 60 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 10 minutes on a wire rack. Remove from pan.
- Cool thoroughly on wire rack.
- Wrap and store overnight before slicing.
- Makes 1 loaf (16 servings).
