Banana Bread

  1. Preheat oven to 350u0b0.
  2. In a large mixer bowl, combine 1 cup of flour, the sugar, baking powder, baking soda and salt.
  3. Add mashed banana, shortening, margarine or butter and milk.
  4. Beat with an electric mixer on low speed until blended, then on high speed for 2 minutes.
  5. Add eggs and remaining flour.
  6. Beat until blended. Stir in nuts.
  7. Pour batter into a greased 8 x 4 x 2-inch loaf pan. Bake for 55 to 60 minutes or until a toothpick inserted near the center comes out clean.
  8. Cool for 10 minutes on a wire rack. Remove from pan.
  9. Cool thoroughly on wire rack.
  10. Wrap and store overnight before slicing.
  11. Makes 1 loaf (16 servings).
