Chicken And Fruit Medley
- 3 whole chicken breasts, halved
- 1/2 c. flour
- 1/8 tsp. ginger
- 1 tsp. salt
- 4 Tbsp. butter
- 1 (9 oz.) can pineapple chunks
- 1 (11 oz.) can mandarin oranges
- 1 Tbsp. lemon juice
- 1 tart apple, pared and cubed
- In a plastic bag, combine flour, ginger and salt.
- Add chicken and shake until well coated; reserve flour mixture.
- In a large skillet, melt butter and brown chicken on both sides.
- Remove to baking dish.
- Add leftover flour mixture to remaining drippings in pan; stir over low heat until smooth.
- Slowly add liquid from pineapple chunks and mandarin oranges, then lemon juice, stirring constantly.
- Simmer until thickened.
- Meanwhile, spread pineapple chunks, oranges and apple over chicken, then add sauce.
- Cover and bake at 350u0b0 for 1 hour.
