Crunchy Peanut Butter Cookies
- 1 cup butter-flavored shortening
- 1 cup chunky peanut butter
- 1 cup sugar
- 1 cup packed brown sugar
- 2 eggs
- 3 tablespoons milk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 cups quick-cooking oats
- 1-1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup crushed cornflakes
- In a large bowl, cream the shortening, peanut butter and sugars. Add eggs, one at a time, beating well after each addition. Beat in milk and vanilla. Combine the flour, oats, baking soda, baking powder and salt; gradually add to creamed mixtures. Stir in the cornflakes.
- Drop by tablespoonfuls 3 in. apart onto ungreased
- . Flatten slightly. Bake at 375u0b0 for 8-10 minutes or until lightly browned. Remove to wire racks to cool.
