Best Grilled Shrimp Ever
- 1 lb. fresh shrimp in shells
- 2 Tbsp. finely chopped onion
- dash of garlic powder or halved clove of garlic
- 1/4 lb. butter or margarine
- 1 tsp. fresh snipped dill or 1/4 tsp. dried dill weed
- 1 tsp. curry powder
- Peel and devein shrimp, leaving tails on (quick way to devein is to run paring knife down back
- of shrimp to splay open, then pull vein out with tip of knife).
- Melt butter in small saucepan. Add onion, curry, dill and garlic.
- Cook, stirring constantly, 2 minutes over medium-low heat.
- Thread shrimp on kabob skewers (these skewers stick less if sprayed with Pam first).
- Brush shrimp with curry butter, using pastry brush.
- Grill over hot coals 4 to 5 minutes or until shrimp are fully pink.
- Can also be broiled under oven broiler.
- Serves 2.
- Recipe can be doubled or tripled easily.
- Goes well with steamed or fried rice.
