Mom'S Spaghetti Sauce
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1/2 lb. lean ground beef
- 1/2 lb. lean ground pork
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 3 Tbsp. dried parsley
- 1 (28 oz.) can tomato sauce
- 1 (28 oz.) can tomato puree
- 1 (4 oz.) can tomato paste
- 1 c. red wine
- 1 c. shredded baby carrots (optional)
- 3 Tbsp. olive oil
- In a large Dutch oven heat the olive oil and add the onions, garlic and carrots (if using).
- Cook slowly for 5 to 10 minutes, being careful not to burn the garlic.
- Add the herbs and cook for a minute or two more.
- Add the beef and pork and brown well.
- Add the tomato sauce, puree and paste.
- Stir well.
- Rinse the cans with the wine and add to the sauce.
- Simmer slowly for 2 or 3 hours.
- Stir often! Serves 6 to 8.
