Pumpkin-Pecan Pie
- 1 c. brown sugar
- 4 Tbsp. flour
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. ginger
- 1/2 tsp. salt
- 3 egg yolks
- 1 c. milk
- 1 c. cooked or canned pumpkin
- 1/4 c. butter or margarine
- 1 c. whole pecans
- baked pie shell
- 3 egg whites
- 9 Tbsp. sugar
- Mix
- brown
- sugar,
- flour,
- spices
- and salt.
- Beat egg yolks; add
- milktnd stir into first mixture.
- Cook over hot water until
- thick, stirring constantly.tdd pumpkin, butter or margarine
- and 3/4 cup pecans.
- Mix well.
- Pour into baked pie shell.
- Cover with meringue made of egg whites and sugar. Garnish with
- remaining pecans.
- Bake in moderate oven (325u0b0) for 20 minutes.
- Serve cold.
