Cranberry Tea Bread
- 3 c. flour
- 1 tsp. salt
- 1/2 tsp. soda
- 3 tsp. baking powder
- 1/2 c. margarine, melted
- 1 1/2 c. sugar
- 2 eggs
- 3/4 c. water
- 1/2 c. orange juice
- 1 tsp. grated orange rind
- 1 c. chopped nuts
- 1 1/2 c. cranberries, cut in halves or coarsely chopped
- 1 unbaked 9-inch pastry shell
- 3 eggs, slightly beaten
- 1 c. Karo dark corn syrup
- 1 c. sugar
- 2 Tbsp. Mazola margarine, melted
- 1 tsp. vanilla
- 1/8 tsp. salt
- 1 c. pecans
- Combine ingredients, adding nuts last.
- Pour into pastry shell.
- Bake in 400u0b0 (hot) oven 15 minutes.
- Reduce heat to 350u0b0 (moderate) and continue to bake 30 to 35 minutes.
- (Filling should be slightly less set in the center than around edges.)
